    1. Bring a small pot of water to a boil, add the tapioca pearls reduce heat and simmer for 5-6 minutes.

    2. Strain the pearls, add to a small bowl and stir through the maple syrup. Set aside.

    3. In a small mixing bowl mix together the chocolate powder and boiling water, stir until powder has completely dissolved.

    4. Evenly divide the cooked tapioca pearls and syrup between two tall glasses.

    5. Pour over the chocolate mixture and divide the milk evenly between the glasses.

    6. Add ice to each glass and top with whipped cream if using.

    7. Serve immediately.
