    1. Wash and remove the pits from the peaches.

    2. Slice and transfer the peaches to a medium saucepan along with the sugar and water.

    3. Bring to a boil, reduce heat and gently simmer for 15 minutes, stirring occasionally to prevent burning. The syrup will begin to reduce and thicken.

    4. Remove from the heat and allow to cool before straining through a fine mesh strainer.

    5. Cool completely before transferring the syrup to a sterilized glass jar and store, sealed, in the fridge for up to 7 days.
