    1. Grate the apples, including the skin and add to a large pot.

    2. Add all other ingredients to the pot except for the brandy.

    3. Heat over a medium heat for 10 minutes, stirring constantly until the sugar has melted, the apple is cooked through and the liquid has reduced.

    4. Remove from the heat, add the brandy, and stir through.

    5. Allow to cool completely before storing in sterilized jars.

    6. Store the jars of mincemeat in the fridge for up to a month.
