    1. Preheat the oven to 350 degrees F / 180 C. Line a 12 hole muffin tray with muffin liners.

    2. In a medium mixing bowl whisk together the flour, sugar, baking powder and baking soda, salt and ground flax seeds.

    3. Add all remaining ingredients and stir through until just combined.

    4. Divide the batter between the muffin liners.

    5. Bake in the oven for 15-20 minutes or until an inserted skewer comes out clean.

    6. Remove and allow to cool on a cooling rack.
