Hollowed-out zucchini is loaded with tangy marinara sauce, perfectly seasoned veggies, and gooey mozzarella cheese to create these tasty, stuffed vegetarian zucchini boats. Preheat oven to 375 degrees F. Line a baking tray with parchment paper and set aside.
Heat oil and sauté the onion, garlic, mushrooms, spinach until softened. Add the Italian herbs and season with salt and pepper.
Remove from the heat and allow to cool while preparing the zucchini.
Slice zucchini in half lengthwise. Use a small spoon, remove the seeds.
Place the zucchinis on the prepared baking tray, flesh side up.
Spread 2 tbsp of marinara sauce over the center of each zucchini boat. Layer each boat with the cooked mushroom mix, sliced olives and top with mozzarella cheese.
Bake in the oven for 15 minutes until zucchini is cooked through and tender.
