Apple Slice Waffles

1. Cut the apple into quarters and remove the core. Slice each quarter lengthwise into thin ⅛-inch slices. You should get roughly 12 good-sized slices.
2. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
3. In a separate bowl, whisk together the egg, milk, maple syrup, oil, vanilla, and melted butter.
4. Add the dry ingredients to the wet and stir just until combined. Let the batter rest for 5 minutes while your waffle maker preheats.
5. Dip each apple slice into the batter, coating both sides. Lift it out and allow the excess batter to drip back into the bowl for a few seconds.
6. Place the coated apple slices in your preheated waffle maker, leaving a little room between them. Cook for about 4 minutes, or until golden brown and cooked through.
7. If making the cinnamon sugar topping, combine the sugar and cinnamon in a shallow bowl. Toss the waffles in the mixture while they’re still hot so the sugar sticks. For an extra-thick coating, lightly brush them with melted butter first.
8. Serve warm and enjoy! They’re also delicious with a little maple syrup or caramel drizzle.
