Chocolate Covered Apple Slices with Caramel

Thin crisp apple slices are dipped in dark chocolate and finished with caramel sauce and your favorite toppings. Each serving has only 100 calories and 6 grams of sugar. These are like caramel apples, but BETTER!
Wash and dry the apples thoroughly. Slice crosswise into approximately ¼-inch-thick slices and remove any seeds or stem pieces. You should get roughly 6 good slices from each apple.
Carefully insert a popsicle stick into the bottom of each apple slice. Don’t slice the apples too thin or they may break when you insert the stick.
Add the chocolate to a microwave-safe bowl and microwave in 30-second intervals, stirring between each, until completely melted. Stir in the coconut oil if using, it makes the chocolate thinner and easier to coat the apples.
Dip each apple slice into the melted chocolate, using a spoon to help coat it. Allow the excess chocolate to drip back into the bowl, then place on a parchment-lined baking sheet.
Add any dry toppings immediately while the chocolate is still wet.
Refrigerate or freeze until the chocolate is completely set. If you’re adding caramel or peanut butter, let the chocolate harden first, then drizzle it over the top.
Enjoy straight from the fridge! Store leftovers refrigerated for up to 3-4 days.
