Fluffy Green Spinach Banana Pancakes

These fluffy green pancakes blend spinach and banana right into the batter, and you’d never guess there’s a full cup of greens hiding inside! And each pancake has 0 grams of added sugar but is still naturally sweet and tastes amazing!
In a small bowl, combine the ground flaxseed and water. Let sit for about 5 minutes, until thickened.
Add the banana, spinach, plant-based milk, and vanilla to a blender. Blend until completely smooth and bright green.
In a large bowl, whisk together the oat flour, all-purpose flour, baking powder, cinnamon, and salt.
Pour the spinach mixture and flax egg into the dry ingredients. Stir just until combined. If the batter seems too thick, add another splash of plant milk.
Let the batter rest for about 5 minutes. This helps create softer, fluffier pancakes.
Heat a nonstick skillet or griddle over medium heat and lightly grease with cooking spray or a little coconut oil.
Scoop about ¼ cup batter per pancake onto the skillet. Cook until bubbles begin forming on the surface and the edges look set, then flip and cook for another 1–2 minutes.
Serve with sliced banana, berries, nut butter, or a drizzle of maple syrup!
